Soft and moist cocoa muffins with pudding





These are the foolproof muffins from a recipe given by a friend. And they are amazing - so soft and moist, even next day.

The pudding surprise filling inspired by my future mother-in-law. It turned out great - it makes the muffins more moist and more fun to eat. The filling really got people by surprise. And K. was really disappointed when he picked a muffin without it.

It was fun to play with the food. ;)

Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 - 30 minutes
Yield: 22 - 24 muffin tins (7 cm in diameter)



Ingredients
  • 2 cups AP flour
  • 2 teaspoons baking powder
  • 2-3 teaspoons cocoa
  • 3/4 cup sugar
  • 1 cup milk
  • 100g butter
  • 2 eggs
  • 1/2 cup - 3/4 cup vanilla custard or pudding
Cooking Directions

Melt butter and leave to cool.

Mix all dry ingredients (flour, baking powder, cocoa and sugar).

In another bowl, mix eggs with milk.

Mix dry and wet ingredients. Add melted butter and stir to mix.

Prepare custard or pudding. Leave to cool.

Prepare muffin tin (I have silicone tins). 
Add one tablespoon of batter, one teaspoon of pudding and another tablespoon of batter.

Bake for 15 minutes in preheated oven. Temperature ca. 170*C. 
After 15 minutes insert a toothpick to check whether they're done - be sure to put the toothpick near the rim of the muffin, so that you actually put it in the batter and not in the pudding inside.
