Hi again! After a month, I know. The life is crazy still. And I'm kinda glad things are happening. But I miss cooking and posting.
Today I'm making a veggie salad - the salad is a must during every family occasion (birthdays, namedays, Xmas, Easter etc) and almost every party we throw.
It's a little bit time-consuming. It's for me at least. I can't chop that fast :)
Apart of a lot of chopping and dicing, the salad is a piece of cake (figuratively, of course) :)
Vegetable salad
Prep time: 30 minutes
Cook time: 25-30 minutes
Total time: 50-60 minutes
Yield:a lot :)
Ingredients
- 6 medium potatoes (cook in skin)
- 4 big carrot (cook in skin)
- 6 hard boiled eggs
- 1 can corn
- 6 medium pickles
- 1 big onion
- mayonnaise
- 1-2 tsps mustard
- 2-3 tbsp sour cream / Greek yogurt
- salt and pepper (to taste)
- optional: 1 medium apple
- optional: 1 cup of chopped leak (instead of onion)
- optional: 1 can green peas
Put potatoes, carrots and eggs in one pot, cover in water and boil till tender.
Do not over-boil - they have to hold shape - we'll be chopping them when cooled.
After potatoes, carrots and eggs cool, remove the skins and shells.
Finely chop or dice all ingredients (except corn or green peas).
Put everything into a big bowl (trust me there's going to be a lot of veggie stuff) :)
In a mug, mix sour cream, mustard and mayo. I always add 3-4 tbsps of mayo - but you may add more cream and less mayo.
Mix all ingredients with mayo sauce till completely incorporated.
Mayo sauce will hold everything together.
Now season to taste and delicately mix everything together.
Refrigerate before eating. The salad is better when it's cold.
