I love looking for new inspiration on the web. I have a whole separate board on Pinterest devoted to cooking inspiration. I just don't seem to have enough time to try everything that looks soo cool!
Recently I've stumbled upon this Polish blog that I just adore and found this amazing recipe I want to share.
I modified the recipe slightly and doubled the amount of ingredients and, as far as I remember, got 62 cookies. That's not much considering their size.
Their name is adequate, isn't it?
Coffee bean cookies
Prep time: 20 minutes
Cook time: 10 minutes
Total time: 30 minutes (one batch)
Yield: 62 small cookies
Ingredients
- 70g butter or margarine (I used margarine)
- 1 1/3 cups sugar (I used powdered sugar - 1 cup)
- 2 eggs
- 2 1/2 cups flour
- 1 - 1 1/3 tablespoons instant coffee
- 2 heaped tablespoons cocoa
- 1 pinch salt (forgot to add it)
- 1 teaspoon baking powder
Mix butter till it gets fluffy and white.
Mix eggs with sugar and coffee. Add to butter and mix a bit more.
In a separate bowl whisk together flour, baking powder, cocoa and salt.
Combine wet and dry ingredients. Knead.
From the dough form small balls (the amount of a teaspoon). Place on the baking tray.
With the blunt side of a knife make a little groove in the ball. Dip the knife in flour if it sticks to the cookies.
Bake for 10 minutes in 180*C.
